It’s summer. Which means it’s HOT — unless you live in some frozen part of the world, in which case I’m really, really sorry. I, on the other hand, am here in Florida, sweltering in the summer sun. Except for when it’s raining. Because when it rains, it pours, and then your day is pretty much ruined because it’s usually right smack dab in the middle of it. Oh well, we survive. When I think of cold food, salad is the first thing that comes to mind — but not just any salad; fruit salad, pasta salad, macaroni salad, potato salad, and of course regular garden salads and the like. I love all of the above — sans mayo. Ew. Please don’t bring me a salad of any kind that has mayo in it. And if you do, it’d better be such trace amounts that I have no idea it’s there…
My favorite salads always incorporate both fruit AND veggies. It’s the best of both worlds, and when you have super seasonable ingredients on hand, why not throw ’em all together in one dish. It only makes sense. Watermelon and mango are all over the place nowadays, especially down here in Florida where everyone has mango trees and they fall off the branches almost as frequently as it rains. This is great for me because they are probably my two favorite fruits. I can’t get enough. One of my good friends has a neighborhood full of mango trees and will bring me them whenever she can find a good one. So stay tuned, because there are lots of mango recipes coming this summer…
But for today, I’m giving you salad. But not just any old salad. This Watermelon, Mango and Arugula Salad is full of juicy watermelon, fresh mango, and peppery arugula. Oh but wait, there’s more. Crunchy toasted pine nuts, sweet dried cranberries, and briny feta cheese are tossed in along with a a fig jam vinaigrette. Watermelon, Mango and Arugula Salad will be a staple on my dinner table all summer long. I think I’m in love.

This looks scrumptious – AGAIN! You always have something delicious for us, don’t you. Incedentally, I’m the opposite of you when it comes to mayo. Hubby is always flabbergasted at how much Miracle Whip I like on my sandwiches, and I like both MW and mayo in my salads. I have started making my own mayo, just because it’s so much better, and nicer to know exactally what’s going into it. HUGS
