Today is the first Sunday Supper of 2014! We’re “Slowly Bringing in the New Year” with a roundup of great recipes for your slow cooker. Thank you to Cindy from Cindy’s Recipes and Writing for hosting! I’m going to make a valiant attempt to use mine more often this year, especially for soups and stews. I’m also going almost 100% vegetarian this year, with the exception of seafood. I found this recipe for Pumpkin, Chickpea and Lentil Stew and immediately decided to make it. Not only is it exactly what I needed for today’s theme, but it works perfectly into my new eating regime.
Baking with pumpkin is fun, but cooking with it is even better. I just love all varieties of winter squash; I had my share of butternut squash recipesthroughout the last month or so, but there was nowhere near enough pumpkin! I made pumpkin bread, chocolate chai pumpkin muffins, and pumpkin cookies. I had the sweets covered, but where was the savory?! A savory pumpkin recipe is long overdue, and this Pumpkin, Chickpea and Lentil Stew totally hits the spot!

What a great stew! I think I’ll try it with butternut squash (not a big fan of pumpkin).
Looks very tasty. Love your goal too…I definitely lean pescatarian!
What a wonderful recipe! I never thought of pumpkin in the Crock-Pot! I so love this! I have to give this recipe a try!!
I appreciate that you roasted your own pumpkin to make this stew! I also adore lentils and chickpeas so this recipe sounds totally delicious to me!

Sounds like a tasty dish. Those spices work great with pumpkin and legumes!
I adore lentils and now I have a fabulous new recipe to try!!!
What a unique and healthy stew. Great addition for Sunday Supper!
Your lentil stew looks delicious and nutritious! So glad you are a part of the Sunday Supper, Shaina.
P.s. Thank you, too, for the chocolate pumpkin chai muffin recipe =)
I am drooling. I feel like I have been making SO MANY lentil dishes lately, that if I make another one, my husband might revolt. But maybe I can make just a small batch of this, just for me, for lunches? I think I need to.
What a great hearty dish to feed a family with mostly boys. We often have dinners and invite them all home. Pinning this for one of those days!
This is a beautiful and colorful stew! Reminds you to enjoy pumpkin other times of the year.
I adore lentils and pairing them with pumpkin is brilliant, YUM!!!
