Just in time to celebrate America’s birthday, the #LeftoversClub is sharing yummy Fourth of July-inspired recipes with our partners, and all of you! I was paired up with Jenny from The Lazy Vegan Baker and so, I was obviously tasked with the challenge of making her a vegan-friendly treat. Of course my mind automatically goes to baking whenever it’s #LeftsoverClub time, but I was stuck in the butter and cream cheese rut, especially since I had just made these incredibly moist, chewy and delicious Red Velvet Chess Bars — Jenny, I SO wish you could have eaten these.

Thankfully, I got my creative juices flowing, and thus, Vegan Coconut Almond Berry Bites were born! Coconut and dried cranberries and blueberries keep up the red white and blue theme, making them a healthy treat for your Fourth of July spread! In fact, I’ll be sharing these Vegan Coconut Almond Berry Bites with my spin class on Saturday morning. Two of our instructors will be teaching a special extended Fourth of July class and I’ve offered to fuel up the spinners with a little pre- and/or post-workout snack.

Usually, Fourth of July is filled with chips, potato salads, macaroni salads, and burgers and hotdogs galore. You may want to have a little something nutritious to eat before heading out to your picnics and BBQs. Vegan Coconut Almond Berry Bites are just enough to hold you over so you don’t go overboard on all the food and drinks laid out before you all day and night.

Vegan Coconut Almond Berry Bites are chewy with just the right amount of texture and a good balance of natural sweetness to give you a pop of energy. Not only are they tasty, but they’re patriotic too!

Vegan Coconut Almond Berry Bites are great for workout fuel or recovery, or as an on-the-go snack. These bite-size treats are packed with protein, dried fruit and coconut.

Ingredients
  • 10 oz. container pitted dates
  • 1 cup raw unsalted almonds
  • ½ cup almond butter
  • ¼ cup agave
  • ½ cup dried cranberries
  • ¼ cup dried bluberries
  • ½ cup shredded coconut
  • pinch of salt
Instructions
  1. Spray an 8x8 baking pan and set aside.
  2. Add all ingredients to a large food processor and pulse on high until a sticky consistency forms and the mixture has binded together.
  3. Spread mixture onto prepared baking pan evenly.
  4. Keep in the refrigerator for 1 hour to set before cutting into bars.

    Oh I can’t wait – these look phenomenal! I tried clicking the link to the Red Velvet Chess Bars but it didn’t work. I wanted to see if I could veganize them :-).
