I sound like a broken record, always talking about quick and simple recipes, but hey — these are the types of recipes I like to keep around for a rainy day (which, by the way, we constantly have here in South Florida during the summer months). The hardest part about making these Tuna and Hummus Cucumber Roll-Ups is slicing the cucumber thin enough for the rolls. Get out your mandolin and it’ll be easy as 1, 2, 3. However, if you don’t have a mandolin, you’ll need to channel your inner chef and utilize those knife skills.

Ok, so maybe this one isn’t the easiest, but once you get past slicing the cucumber, it’s smooth sailin’! Feel free to make your own hummus, but we’re trying to stick to quick and easy here, remember? So use your favorite flavor of prepared hummus — I used sun dried tomato and basil. As for the tuna? When it comes to my Tuna and Hummus Cucumber Roll-Ups, Only Bumble Bee Albacore Will Do™! I prefer Bumble Bee® Solid White Albacore over Chunk Light Tuna because of its firm texture, light color and fresh taste. It’s the perfect ingredient to enhance almost any tuna recipe and adds a variety of nutrients including lean protein, healthy fat, and important vitamins and other nutrients. Bumble Bee® offers responsibly wild-caught Albacore that is so delicious and versatile that it will work well as the main ingredient in just about any recipe — and it works exceptionally well in my Tuna and Hummus Cucumber Roll-Ups.

You may be used to making your tuna salad with mayonnaise – or if you’re my dad, you use cream cheese — but I like to look for healthier alternatives when making tuna. Hummus is a great way to up the protein content and add great flavor to our star ingredient, Solid White Albacore Tuna. These roll-ups make a great make-ahead snack to bring to work, school, etc.

And to all you Moms and Dads reading, Tuna and Hummus Cucumber Roll-Ups would be great for your kids’ after-school snack! Here’s a fun idea — set out all the prepared ingredients and let them create their own roll ups. Play around with different flavors of hummus (if they don’t like hummus, Greek yogurt is another healthy swap!) and let them go to town mashing up the tuna, spooning the mixture onto the thinly sliced cucumber, and rolling it up.

Ingredients
  • 1 5 oz. can Bumble Bee® Solid White Albacore in Water, drained
  • 1 tbsp your favorite flavor hummus
  • 1 cucumber, sliced very thin (preferably using a mandolin)
Instructions
  1. Mix together the tuna and hummus, careful not to break up the chunks of tuna too much.
  2. Cut the thin strips of cucumber down the center, length-wise.
  3. Place a teaspoon of the tuna and hummus mixture at the bottom of the cucumber strip and roll upwards.
  4. Use a small toothpick to secure and remove when ready to eat.
