Pumpkin Spice Oatmeal Cookies #LeftoversClub

There's nothing like biting into a warm, chewy oatmeal cookie — even better when that bite introduces you to a pop of pumpkin spice! Pumpkin Spice Oatmeal Cookies will be your new favorite fall cookie, I guarantee it!
  • 1 stick unsalted butter
  • ⅓ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ¾ cup flour
  • ½ tsp teaspoon baking soda
  • ½ tsp pumpkin pie spice
  • ¼ teaspoon salt
  • 1½ cups oats
  • 1 bag Nestle Tollhouse Pumpkin Spice Morsels
  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  2. Whisk together the flour, baking soda, pumpkin pie spice and salt in a medium bowl.
  3. Beat together the butter, sugars, egg and vanilla in the bowl of a stand mixer and mix until light and fluffy.
  4. Add the dry ingredients. Add the oats and continue to mix until well combined.
  5. Fold in ¾s of the bag of pumpkin spice morsels with a rubber spatula.
  6. Use your hands to roll each ball into 2-inch balls and use the palm of your hand to flatten them.
  7. Evenly disperse the remaining morsels on the tops of each cookie.
  8. Bake for 12 minutes. Allow to cool completely to avoid crumbling.
