Kale and Toasted Quinoa Egg White Scramble

Tired of the same old scrambled eggs? Try something a little out of the box, like a Kale and Toasted Quinoa Egg White Scramble.
Ingredients
  • 10 cherry tomatoes, halved
  • 1½ tbsp olive oil, divided 3 ways
  • salt and pepper
  • 3 large stalks of kale, ribs removed
  • 2 tbsp uncooked quinoa, toasted
  • 4 egg whites
  • 1 tsp milk of choice (I used cashew milk)
  • salt and pepper
  • 1 oz. crumbled feta chees
Instructions
  1. Preheat the oven to 400 degrees.
  2. Place halved cherry tomatoes in a small bowl.
  3. Drizzle with ½ tbsp olive oil and season with salt and pepper. Toss to coat.
  4. Arrange the tomatoes on a baking sheet lived with parchment paper or a silicone baking mat.
  5. Bake for 20 minutes.
  6. While the tomatoes are cooking, add ½ tbsp olive oil to a medium saucepan and add kale leaves.
  7. Cook on medium for about 6-8 minutes or until the leaves start to wilt and become a little crispy. They may appear almost burnt, but this is the texture you want to achieve.
  8. Remove the cooked kale leaves from the pan and set aside.
  9. Add uncooked quinoa to the pan (do not add any additional oil) and reduce to low heat. Cook, covered, for about 2-3 minutes or until you start to hear a popping noise.
  10. It will both sound and smell like you're making popcorn. Keep a close watch to make sure the quinoa doesn't burn.
  11. Remove toasted quinoa and set aside.
  12. Add egg whites, milk, salt and pepper to a small bowl and whisk until combined.
  13. Heat remaining ½ tbsp oil in the pan on medium heat.
  14. Add egg white mixture and reduce to low heat. Let the eggs begin to cook and then stir until fluffy and just about cooked through.
  15. Remove from heat and allow to finish cooking.
  16. Add crumbled feta cheese and toasted quinoa to the pan and mix into the egg whites. Season as needed.
  17. Top with cooked kale and roasted tomatoes.
  18. Serve right away.
