Vegetarian Lentil and Sweet Potato Sloppy Joes

It's time to introduce a Sloppy Joe for my Vegetarian friends. This Lentil and Sweet Potato Sloppy Joe is just as hearty and tasty as the traditional dish that I'd bet any meat-eater would enjoy it too!
  • 1 lb brown lentils, cooked according to package instructions and cooled.
  • 1 medium sweet potato, peeled and small diced
  • 1 jar DelGrosso's Joe Joe's Sloppy Joe Sauce
  • ½ tbsp olive oil
  • Kosher salt
  1. Heat olive oil in a deep sauté pan over medium-high heat.
  2. Add sweet potato, season with salt, and cook until the pieces have softened and start to brown.
  3. Stir in the cooked lentils and sauce.
  4. Reduce to a simmer and continue to cook, covered, for 10 minutes.
  5. Serve over your choice of bread.
