Ramen Mac 'n Cheese

Channel your inner college-kid and combine two of the most iconic dorm room favorites — macaroni and cheese and ramen!
  • 6 Ramen noodle packages (flavor doesn't matter, you won't be using the flavor packets)
  • (2) 8 oz. blocks of sharp cheddar cheese
  • (2) 8 oz. blocks of extra sharp cheddar cheese
  • 4 tbsp corn starch
  • 3 cups unsweetened vanilla cashew milk
  1. Grate the cheddar cheese and add to a large mixing bowl.
  2. Add cornstarch and mix well.
  3. Heat milk in a large sauce pan on medium-low heat and add in the grated cheese, stirring every so often until smooth and creamy.
  4. In a separate pot, boil the ramen noodles. Set aside the flavor packets (or throw them away).
  5. Add the noodles to the cream sauce, still over low heat, and stir until completely combined.
  6. Either serve immediately, or preheat your oven to 350 degrees and prepare a 9x13 baking dish.
  7. If choosing the oven option, pour the ramen mac 'n cheese into the prepared baking dish and bake for 15 minutes.
