Ramen Mac 'n Cheese

Serves: 9x13 pan
- 6 Ramen noodle packages (flavor doesn't matter, you won't be using the flavor packets)
- (2) 8 oz. blocks of sharp cheddar cheese
- (2) 8 oz. blocks of extra sharp cheddar cheese
- 4 tbsp corn starch
- 3 cups unsweetened vanilla cashew milk
- Grate the cheddar cheese and add to a large mixing bowl.
- Add cornstarch and mix well.
- Heat milk in a large sauce pan on medium-low heat and add in the grated cheese, stirring every so often until smooth and creamy.
- In a separate pot, boil the ramen noodles. Set aside the flavor packets (or throw them away).
- Add the noodles to the cream sauce, still over low heat, and stir until completely combined.
- Either serve immediately, or preheat your oven to 350 degrees and prepare a 9x13 baking dish.
- If choosing the oven option, pour the ramen mac 'n cheese into the prepared baking dish and bake for 15 minutes.
