What’s the one thing you absolutely have to have at any summer get together? If you said chips and salsa, you are my kind of people! One of the great things about living in Florida is that we can have “summer” gatherings all year round, and you can bet we always like to have a big bowl of Simple Summer Salsa every time.
I’ve made this super flavorful mix of diced tomatoes, avocado, mango and pineapple for various shindigs, boat outings, pool days and just for snacking around the house. My roommate loves the savory sweetness of the ingredients and requests it on a regular basis. Lucky for us, mangoes are coming into season so we can snatch a couple from a neighbor’s lawn down the street. Avocados are also in season, and well — pineapple practically screams summer right in your face. And of course, no every salsa needs tomatoes! Grab a can of Hunts Diced Tomatoes and you are all set to make this Simple Summer Salsa!
These tomatoes are flash-steamed with only water for safe removal of the peels. There’s a huge variety of flavors to choose from — I spent about ten minutes in Walmart just staring at the line of Hunts Diced Tomato varieties on the shelf. You’ve got your plain tomatoes in sauce, Basil, Garlic & Oregano, Sweet Onion, Green Pepper, Celery & Onion, Spicy Red Pepper, and so many more. Since I normally do add Italian seasonings to my salsa for a little bit of extra flar, I chose the Basil, Garlic & Oregano (No Salt Added) to use in my Simple Summer Salsa.

- 1 ripe avocado, diced
- 1/2 ripe mango, small diced
- 1 cup diced fresh pineapple
- 1 14.5 oz can Basil, Garlic and Oregano Hunts Diced Tomatoes
- 1/2 tbsp fresh cilantro
- Salt and pepper
- Combine avocado, mango, pineapple and Hunts Diced Tomatoes in a medium bowl and mix well.
- Sprinkle fresh cilantro on top.
- Season with salt and pepper to taste.
