Okay, this is definitely not a summer dish. Lentils and sweet potato stand in for ground beef in this vegetarian-friendly Sloppy Joe using DelGrosso Foods, Inc. La Famiglia DelGrosso new Cousin Joe Joe’s Sloppy Joe Sauce. The sauce is sweet, smokey, and completely meat-free — something I can totally get behind!

Of course this would make a fabulous meat-filled Sloppy Joe, over here in Take A Bite Out of Boca land, we steer clear from beef and poultry. Lentils are a great substitute for the ground meat since these little legumes sort of resemble the texture and color. Sweet potatoes add a nice pop of color and a subtle sweetness. You could also add in some spinach, kale, eggplant, carrots, butternut squash, zucchini, yellow squash — any veggie will work!

When you’re looking for an easy weeknight meal come busy school season, this is going to become your go-to. I may not have kids, but I think I know a good sauce when I taste one — and any kid would fall in love with this one. Keep your Sloppy Joe vegetarian and use lentils like I did or make them with ground beef (or hey, why not try ground chicken or turkey?). Don’t skimp on the addition of sweet potato as it really did give the dish a little extra zing. And go ahead, try adding in veggies too! Vegetarian Lentil and Sweet Potato Sloppy Joes

It’s time to introduce a Sloppy Joe for my Vegetarian friends. This Lentil and Sweet Potato Sloppy Joe is just as hearty and tasty as the traditional dish that I’d bet any meat-eater would enjoy it too!
Ingredients
  • 1 lb brown lentils, cooked according to package instructions and cooled.
  • 1 medium sweet potato, peeled and small diced
  • 1 jar DelGrosso’s Joe Joe’s Sloppy Joe Sauce
  • 1/2 tbsp olive oil
  • Kosher salt
Instructions
  1. Heat olive oil in a deep sauté pan over medium-high heat.
  2. Add sweet potato, season with salt, and cook until the pieces have softened and start to brown.
  3. Stir in the cooked lentils and sauce.
  4. Reduce to a simmer and continue to cook, covered, for 10 minutes.
  5. Serve over your choice of bread.
