A “Skinny” Treat

I made these low-fat, low-calorie Cinnamon Oatmeal Banana cookies, adapted from a recipe on the blog, Skinnytaste. The original recipe is a Oatmeal Banana Nut cookie, using chopped walnuts, but I opted to forgo on the nuts for an even lower fat and lower calorie version of the cookie.  I also used rolled oats instead of quick oats, and I think they really enhanced the flavor and texture of the cookie.  Instead of the gritty taste you can sometimes get from instant oatmeal, the rolled oats offered bigger pieces of oatmeal in every bite. They came out moist and fluffy and absolutely delicious! :)
