There is one meal that I never take the time to cook for. Breakfast. I’m so boring when it comes to what I eat in the morning. I don’t like to eat before my workouts because they’re so early, so breakfast comes afterward. If I’m not going somewhere to eat, I head home and am either A) exhausted, B) rushing to get somewhere, or C) or settling down to work and want something quick and easy. Greek yogurt and berries are seen every so often, but usually it’s straight to the blender for a protein-packed shake. But if there’s a bowl of this Apple Cinnamon-Raisin Overnight Oats waiting for me in the fridge…things might go in a different direction.

So how do these overnight oats get so smooth and creamy? It’s that Stonyfield Organic 100% Grassfed Yogurt! The flavor, though? That’s from Woodstock Cravings Organic Hiker’s Harvest snacks. Woodstock and Stonyfield are teaming up to highlight their organic and non-GMO products in a fun and delicious way. There are over 250 products in Woodstock’s ten categories — over 75% of their products are domestically sourced, and 75% are USDA Organic. There are 145 Non-GMO Project Verified, and 80 more are enrolled and on their way! There’s condiments and sauces and nut butters galore, frozen, fruits and vegetables, and even tofu. But my favorites? The packaged fruits, nuts and snacks! Hiker’s Harvest mix includes raisins, pumpkin seeds, dried apples & almonds. I used to hate raisins, which my dad just couldn’t understand because they were his favorite. Over the years, raisins have become a good friend — although, I am partial to the golden ones. These aren’t golden, but they’re still okay in my book!

Anyway… back to all that delicious apple-y, cinnamon-y, raisin-y goodness in these overnight oats… I combined a nice amount of the Hiker’s Harvest snack mix with the oats, yogurt and a splash of unsweetened cashew milk. Then of course, comes the cinnamon! Sometimes I’m a bit heavy-handed when it comes to cinnamon, so feel free to use as much or as little as you’d like. If you like things sweet, go ahead and add some sugar. I find that the tang from the yogurt and the subtle sweetness from the raisins and apples is enough for me in the morning.

Here’s where things get crazy… You’re going to leave the oatmeal in the refrigerator over night. No cooking, no stovetop — not even a microwave is needed for this. This is definitely my style of breakfast! All I need to do is open up the fridge and there is it, ready and waiting? I’m all in.

Apple Cinnamon-Raisin Overnight Oats

Ingredients
  • 1 6 oz. cup of plain Stonyfield Organic 100% Grassfed Yogurt
  • 1/2 cup Woodstock Cravings Organic Hiker’s Harvest
  • 1 tbsp unsweetened cashew milk
  • 3/4 tsp cinnamon
Instructions
  1. Combine all ingredients in a medium-sized bowl and mix well.
  2. Divide the mixture into two 4 oz. mason jars, tupperware, containers, etc.
  3. Tightly seal the lid and keep refrigerated overnight.
