Apple Ginger Smoothie

I have grown to absolutely love ginger since starting my job at Publix Aprons. So many of our recipes, especially the Asian-inspired dishes, call on this ingredient for its spicy, sweet flavor. I never really thought too much about it before, using the ground version here and there in recipes, but never did I imagine how much I would like freshly minced ginger in just about everything. I used it in these Oatmeal Ginger Sandwich Cookies and even the Cookie Butter cream filling inside. It’s also the main flavor in one of my favorite cocktails, ginger mojito. It’s awesome in sauces and marinades, and perfect in any stir fry.

Who knew it’d also be good in a smoothie? Well, I did. Because ginger is good in everything. Duh.

Apple Ginger Smoothie
1/4 cup water
1/2 cup unsweetened almond milk
1/2 medium Fuji apple, peeled and chopped
1/2 frozen banana
5-6 Medjool dates, pitted and chopped
2 tbsp Gourmet Garden ginger, or fresh ginger, chopped
1 tbsp cinnamon
1 cup ice

Put all ingredients in a blender and blend until smooth.
