A refreshing cocktail like these Blackberry Ginger Mojitos are just the thing to keep you cool during the summer heat. You can make this cocktail by the glass or in big batches, perfect for bringing to a birthday party!
I miss being a little kid and having birthday parties to go to every weekend. Roller skating parties, bowling parties, themed parties — those were the days! It was so much fun to get together with a bunch of your friends to celebrate a birthday, not to mention the yummy cake or cupcakes that ends every good birthday party. I wish more people still had birthday parties instead of just gathering people together to go out to dinner in a loud restaurant or grab drinks at a local bar; it’s so much less intimate than sharing time together in someone’s home or at a special location. I’d much rather have a nice group of people over to my house for a potluck of party where everyone can bring their favorite dish or drink and catch up with old friends, meet new ones, and just have a good time.
My good friend Terri from Love and Confections totally agrees with me on this and has decided to round up some of her blogging friends to help her celebrate a pretty big birthday… Today is her 30th! (Today is also Rachel from A Southern Fairy Tale’s birthday! Happy Birthday Rach!)
I’m super excited to be invited to Terri’s 30th, especially after spending so much time with her a couple weeks ago at the Food and Wine Conference. She is one of the first bloggers I ever met and we’ve stayed in touch for almost three years! Terri is such a sweetheart, and she has the most adorable chubby-cheeked little girl, Grace, who I am borderline obsessed with! Happy Birthday, Terri, you rock!
Every good party has a good signature drink. It’s easy to get beer and wine, but when it comes to liquor, you don’t want to have to schlep (and pay for!) all different kinds of alcohol, mixers, garnishes, etc. Instead, why not pick one signature cocktail to offer your guests? Blackberry Ginger Mojitos have been on my mind ever since trying this insanely delicious Blackberry Ginger Balsamic at The Olive Taste during one of the Savor Our City Culinary Tours. You can make a huge batch of these Blackberry Ginger Mojitos to fill a pitcher to leave out on the bar so guests can help themselves. This saves you time AND money — a win-win!
I love the combination of the sweet, tart blackberries and spicy ginger paired with the classic Mojito flavors of white rum and mint. I use stevia to sweeten it up a bit, and club soda to keep the calorie count down and the bubbly presentation up. I love a good mojito, and I hope Terri and all her party guests do too!
- 2 oz. white rum
- 4 oz. club soda
- 1 tsp Blackberry Ginger balsamic vinegar
- 6-8 mint leaves
- 1 small piece of fresh ginger, thinly sliced
- 2-5 blackberries
- 1 tsp stevia (adjust to desired sweetness)
- In a cocktail shaker, mix rum, club soda and balsamic vinegar. Pour into a tall glass over ice and set aside.
- Using a mortar and pestle, muddle the mint leaves and ginger. Remove and add to the glass. Muddle 2 of the blackberries, add to the glass, and stir. Garnish with a few more whole blackberries.
