Cake Batter Chocolate Chip & Peanut Butter Cup Cookies

The holiday season is definitely upon us. And what does that mean? BAKING! Practically all of the items in the baking section in Publix were on sale this week. AP flour was $1.99!!! You know I had to stock up. Sweetened condensed milk 2 for $4, BOGO on brownie and cake mix, and so many other deals…  Obviously I had to get everything.

So what do you do when you have cake mix, but you don’t want to be all conventional and whatnot and actually bake a cake? You make cake mix cookies, of course. I turned to one of my fellow bloggers who never fails with her awesome cake mix cookie recipes – Sally’s Baking Addiction. Her strawberry cake mix cookies are to-die-for, so I knew she had to have others just as delicious. I came across her Cake Batter Chocolate Chip Cookies. I had it in my head that I wanted to incorporate the rest of the Reese’s Peanut Butter Cups I have left over from Halloween, and adding chopped up Reese’s to a chocolate chip cookie sounds pretty fan-freaking-tastic to me. Those Reese’s just had to go; it was time to get them baked up in something.

Can I tell just how amazing these cookies turned out? No wonder they’re Sally’s most popular recipe! The entire cookie was soft, all the way to the very edge. And LOADED with chocolate chips and chopped Reese’s Peanut Butter Cups. You get chocolate and peanut butter in every bite. One thing’s for sure, I did not skimp on the goodies inside these cookies.

Oh, and baking these make me realize one more kitchen gadget I really need. A flour sifter. Because a colander just isn’t cutting anymore. Anyone need an idea for a Hanukkah gift for me? There you go.


Cake Batter Chocolate Chip & Peanut Butter Cup Cookies

Cake Batter Chocolate Chip & Peanut Butter Cup Cookies
 Adapted from Sally’s Baking Addiction
 Makes 30 cookies


  cup AP flour
  cup yellow cake mix
 ½ tsp baking soda

3/4 cup (1 ½ sticks) unsalted butter, softened
 ½ cup granulated sugar
 ½ cup brown sugar
 1 egg
 2 tsp vanilla extract
 1 cup chocolate chips
 1 cup chopped Reese’s Peanut Butter Cups

In a large bowl, sift together the flour, cake mix and baking soda and set aside. In the bowl of a stand mixer, cream together the butter and sugar. Add in the egg and vanilla and mix until creamy.

Add the flour mixture and mix until just combined. Fold in the chocolate chips and peanut butter cups.

Chill the dough for at least 1 hour or overnight. (Sally insists that this is a mandatory step. Please do not skip. Since the dough is very sticky, you need to chill it so the cookies will not spread too thin while baking.)
Preheat the oven to 350 degrees. Scoop cookies on a baking sheet lined with parchment paper or a silicon baking mat. Bake for 10-12 minutes.
