Every month when it comes time to figure out what I want to make for #LeftoversClub, I search high and low on Pinterest for something that will travel well. Cookies, quick breads and muffins are always a good idea — but I feel like I’ve overdone those. I wanted to send something unique to my partner, Kathya of Basic N Delicious. And since spring is almost here, I also wanted to send her something fun and colorful to celebrate the upcoming season of warm weather, flowers and sunshine.

Cake Batter Fudge Bars were my little sister Rebecca’s idea. In fact, she made them for a bake sale at school to support her a cappella singing group and they were a hit. I knew these would be the perfect sweet treat to send Kathya — and I knew there’d be plenty extra to keep at home too! Kathya and I have not only been members of #LeftoversClub for quite a while, but we are both part of #SundaySupper too. She’s always making really tasty treats like these Nutella Baileys Cookies and Coconut Banana Bundt Cake so I had a feeling she would totally appreciate some good fudge!

The recipe is SO easy. You start by combining boxed cake mix and powdered sugar in a microwavable bowl, whisk in milk and top with one stick of butter. Throw the bowl in the microwave and then mix it all together. This is where the fun part comes in… Time to add your colorful candies, sprinkles, chocolate chips — whatever! I used pastel colored candies & white chocolate M&M’s to give these Cake Batter Fudge Bars a Springtime theme.

Cake Batter Fudge Bars

These quick and easy no-bake Cake Batter Fudge Bars are made with four simple ingredients: cake mix, powdered sugar, milk and butter. Add candy and sprinkles for an extra pop of color and sweetness!
Ingredients
  • 2 cups yellow cake mix
  • 2 cups powdered sugar
  • 1/4 cup unsweetened almond milk (or your milk of choice)
  • 1 stick unsalted butter, cut into four pieces
  • 1/2 cup M&M’s
  • 1/2 cup colored candies
Instructions
  1. Grease an 8-inch square pan and set aside.
  2. Combined cake mix and powdered sugar in a large microwavable bowl and mix well.
  3. Whisk in almond milk.
  4. Place the four pieces of butter on top of the mixture and microwave for 2 minutes.
  5. Mix in the melted butter until well-combined.
  6. Stir in M&M’s and candies.
  7. Pour the batter into the prepared pan and use a rubber spatula to spread evenly.
  8. Refrigerate for at least 4 hours or overnight for best results
