I may not celebrate Christmas, but I know just about every single Christmas song out there and love each and every one of them. My absolute favorite is Carol of the Bells by the Trans-Siberian Orchestra. They are amazing. And that song…. hands down one of the best pieces of music I have ever heard in my life. Seeing the Trans-Siberian Orchestra is super high on my bucket list.
Speaking of Christmas tunes, today’s #SundaySupper theme is Holiday Music and Movie-Inspired Dishes. Thanks to our host Tammi, of Momma’s Meals! I used another one of my favorite Christmas songs as my inspiration for making these Chai Spiced Roasted Nuts: Chestnuts Roasting on an Open Fire. I especially like Christina Aguilera’s pop version.
Roasted nuts are such a great snack to make and give away as gifts during the holidays. There are so many combinations of spices and flavors you can use. You can go sweet, spicy, savory or just keep it simple with a tiny bit of salt. In the spirit of Christmas, I chose to be a little naughty and nice — a little spice with my sweet.
Almonds and cashews are coated in a mix of Chai flavors: cinnamon, cardamom, black pepper, ginger, star anise, and I also added nutmeg even though this isn’t used in traditional chai mixes. I used Tazo Chai Latte concentrate to get the Chai flavor I wanted for these roasted nuts. They are so easy to make and can be packaged in a glass jar or any kind of container to give to your family and friends for the holidays!

Chai Spiced Roasted Nuts
8 oz. raw almonds
8 oz. raw cashews
1 egg white
1 tbsp water
2 tbsp Tazo Chai Latte concentrate
1 tbsp cinnamon
1/2 tbsp ginger
1/2 tbsp nutmeg
3/4 cup granulated sugar
Preheat the oven to 325 degrees.
In a medium bowl, use an electric mixer to whip the egg white and water together until stiff peaks form. Add the Chai Latte concentrate, cinnamon, ginger, nutmeg and sugar and mix until everything is combined.
Add the almonds and cashews to the mixture and stir until the nuts are completely covered.
Line a baking sheet with a silicone baking mat or parchment paper. Pour the nuts onto the mat and spread evenly. Bake for 30 minutes, stirring at the 15 minute mark. Stir again after 30 minutes and put back into the oven for another 5 minutes. Let the nuts cool completely before putting them into a jar/container/tupperware/etc.
