I have really been trying to use my crockpot more often. I love it because it's really small, so it's perfect for nights when I am only cooking for myself. It helps me to control my portion and since I don't really like leftovers, I don't have to worry about that. Since I'm not an expert at the crockpot just yet, I'm always looking for good recipe ideas. I turned to one of the very first bloggers I started following, Kelly from Just a Taste, who has been a mentor to me in many ways. Her blog was introduced to me by a family friend , and Kelly was so sweet when I reached out to her with advice about starting my own blog. I met her at the Food Blog Forum in Orlando two years ago and she was as nice as can be! I absolutely love her blog and all of her recipes, so I searched her site for some slow-cooker ideas. I was totally inspired by her Slow Cooker Honey Garlic Chicken, but decided that rather than completely copying hers, I'd use her as my motivation to put my own spin on the recipe and make it my own. I love all of the flavors in Kelly's recipe, but since its #PepperParty week, I had to get peppers in there, too! Red bell peppers pair well with this Asian-style chicken, and I threw in some sugar snap peas, mushrooms and broccoli too. These are all vegetables that come to my mind when I think of an Asian stir-fry. There is definitely some heat to this dish, mostly from the red pepper flakes. So if you aren't that into spice, just omit them from the recipe.

Crockpot Spicy Honey Soy Chicken and Peppers
Inspired by Just A Taste’s Slow Cooker Honey Garlic Chicken
1 boneless, skinless chicken breast
2 1/2 tbsp honey
1/4 cup low sodium soy sauce
2 1/2 tbsp red chili pepper spread
1 tsp duck sauce
1 1/2 tsp sesame oil
1 tbsp Gourmet Garden garlic paste
1/2 tsp crushed red pepper flakes
1/2 red bell pepper, medium dice
Place the chicken breast on the bottom of the crockpot.
In a small bowl, whisk together all of the remaining ingredients. Pour the mixture directly over the chicken. Add in the peppers. Cook on low for 5 hours or until chicken is completely cooked.
