You know the adorable little roomie of mine who has helped me make this Homemade Ravioli with Spinach, Ricotta and Feta Filling and this Cookies and Cream Chocolate Layer Cake? Welp, she’s becoming a Food Blogger! My baking adventures with Emma go back way before I ever moved in. When I first met Amy (her mother; my roommate), we spent hours talking about our love of food, and eventually discovered we both love to bake. When the holidays rolled around, we made all kinds of goodies and of course Emma was a huge help. Emma also loves making Creamy Stuffed Strawberries with me, and has helped me with countless other things in the kitchen. She bakes on her own too: chocolate chip cookies, fudge chocolate brownies and lemon cakes are all on constant rotation.
We’ve only had one big mishap in the kitchen — these Pink Lemonade Cupcakes. I don’t think I ever really expressed how awful they turned out when I wrote about them – partly because I was embarrassed. But I’m ready to tell you…THEY WERE DISGUSTING. And I finally figured out why. The recipe calls for self-rising flour. I guess in the baking aisle, self-rising flour and self-rising corn meal are right next to each other. And I guess I wasn’t paying attention, because I grabbed the corn meal. I noticed this the other day when I was making beer bread that also called for self-rising flour (recipe coming soon) and when I pulled it out of the cabinet, I noticed the words corn meal. I think I laughed for a good ten minutes straight. At least the Pink Lemonade Cupcake mystery is solved!
