Party Recipes: Fresh From Florida Sweet Corn Guacamole and Watermelon-Feta Skewers

Summer is here and it’s time to party! Fresh From Florida Sweet Corn Guacamole and Watermelon-Feta Skewers are party-friendly appetizers that are super easy to make, and guaranteed crowd-pleasers.

There’s certainly no shortage of fresh produce in Florida from our local farmers all year long, and right now is the best time of year to get your hands on sweet corn and watermelon. Other local Florida produce, such as tomatoes, blueberries, bell peppers, mangoes, and star fruit are also in season. Watermelon is my favorite summer fruit, and it makes an appearance in my shopping cart during every grocery store trip during its season.

Another thing you can find a lot of during these next couple months? Parties! Whether you’re gathering friends together for a fun dinner party, or hitting the beach for BBQ-style fun, it’s crucial to have a few tried-and-true recipes in your back pocket that are quick and easy to whip up for a group of people.

Sweet Corn Guacamole and Watermelon-Feta Skewers are two prime examples!

I may not always cook meals for myself at home, but if there’s a party happening and appetizers are needed, I’m all in! One of my favorite ideas to get friends together for a night full of fun is hosting Game Night.

Grab a couple of your favorite games and get ready to go head-to-head with a few other friends — and of course, having yummy food to snack on is a necessity! We pitted girls against guys, and needless to say, we got in a major ab workout from all the laughing that went on throughout the night.

In between rounds of hilarious, adult-friendly games, we took a break to get our fill of Sweet Corn Guacamole, a simple dish made with avocado, fresh lime, cilantro, chopped tomatoes and Fresh From Florida sweet corn. I served it with lime-flavored tortilla chips and plantain chips, but any kind of chip, or even crackers or pretzels, will be just as delish. Dips are a must-have for any party. You can never go wrong with a good chip-and-dip combination!

Watermelon-Feta Skewers are another really popular party food, mostly because it’s a handheld appetizer that features that sweet and salty flavor combo. Make sure to purchase feta blocks so you can easily slice it in squares to match the size of your Fresh From Florida watermelon chunks. You can use either basil or mint in between the two star ingredients. Either would work really well!

Look for Fresh From Florida sweet corn and watermelon, as well as other produce and seafood, in your local Florida grocery stores — the labels are clearly placed on the front of the produce to make it easy to find!

Summer is here and it’s time to party! Fresh From Florida Sweet Corn Guacamole and Watermelon-Feta Skewers are party-friendly appetizers that are super easy to make, and guaranteed crowd-pleasers. Simply adjust the amount of ingredients based on how much you need to make.
Ingredients
  • For the Sweet Corn Guacamole:
  • Ripe avocados, pitted and scooped
  • Tomatoes, diced
  • Fresh From Florida sweet corn
  • Cilantro
  • Fresh lime juice
  • For the Watermelon-Feta Skewers:
  • Fresh From Florida watermelon
  • Block feta cheese
  • Fresh basil or mint
  • Skewers
Instructions
  1. For the Sweet Corn Guacamole:
  2. Mix all ingredients together in a large bowl.
  3. Season with salt and pepper to taste.
  4. Keep covered with plastic wrap and refrigerated until ready to eat.
  5. For the Watermelon-Feta Skewers:
  6. Cut the watermelon and feta into similar sized cubes.
  7. Build your skewers: feta, mint/basil leaf, watermelon
  8. Keep refrigerated until ready to eat.
