Shaved Brussels Sprouts and Kale Salad is a seasonal salad perfect to serve up alongside your favorite entree.
What’s better than a salad filled with lots of fall ingredients? Well, maybe a salad filled with lots of summer ingredients… or just a salad filled with lots of any ingredients. Okay, okay, I just really love big full-of-everything kinds of salads.
That’s why I was super excited to see this blend of kale, and thinly shaved Brussels spouts, red cabbage, white cabbage and broccoli when I was at Trader Joe’s recently. It’s called the Cruciferous Crunch Collection, but I say it should be the Salad Lover’s Dream Collection! Especially when you fix it up all pretty with some bright yellow heirloom tomatoes, sweet and tangy dried cranberries, and crunchy, slivered almonds. A simple mixture of olive oil and balsamic vinegar is all you need to dress this kind of salad. I don’t need big, fancy dressings on my salads. I like the ingredients to shine!
This Shaved Brussels Sprouts and Kale Salad is the perfect side dish — and easily customizable to whatever’s in season or whatever you like.

- 1 12 oz. bag Trader Joe’s Cruciferous Crunch salad blend
- 8-10 yellow cherry tomatoes, halved
- 1 cup dried cranberries
- 1/2 cup slivered almonds
- olive oil
- balsamic vinegar
- Combine the salad blend, tomatoes, dried cranberries and almonds in a large bowl.
- Toss with your preferred amount of oil and vinegar.
