I’m not really a huge fan of cooking dinner for myself at home (I leave that to the boyfriend, he’s a pretty awesome cook), but when there’s a dinner party or any kind of big get-together, I’m all about it! That’s one thing I love about the holiday season — there are plenty of opportunities to get creative in the kitchen and come up with yummy recipes for large groups.

Along with these parties, the holiday season also brings the need for time-saving tips and tricks, because let’s be real — this is a crazy busy time of year. Better Than Bouillon, a paste concentrate that is equivalent to a bouillon cube or broth, is just what you need when you want that “cooked-all-day” flavor, without actually having to cook something all day.

Keto-Friendly Cauliflower Stuffing with Better Than Bouillon

When you’re strapped for time, this Keto-Friendly Cauliflower Stuffing is an ideal recipe to make for those holiday celebrations you have coming up — it took me only about 30 minutes to make on the stovetop! I used the Roasted Garlic flavor, but Better Than Bouillon has a pretty wide variety of bases that will truly elevate any of your favorite holiday recipes. Besides Roasted Garlic, there is also Roasted Chicken, Roasted Beef, Roasted Turkey, Seasoned Vegetable, Mushroom, vegetarian “No” Chicken and “No” Beef, and more.

Better Than Bouillon Base

Keto-Friendly Cauliflower Stuffing was my contribution to our family Thanksgiving dinner this year, but it would be great for Christmas or Hanukkah dinner, or really any time of year. Traditionalists may scoff at this healthier twist on stuffing, but for those who are gluten-free, or simply trying to keep a Keto or low-carb diet this holiday season, it’s a good recipe to have on hand!

Keto-Friendly Cauliflower Stuffing with Better Than Bouillon

Not only is this Keto-Friendly Cauliflower Stuffing healthier, it’s also super quick and easy to throw together. Remember, Better Than Bouillon bases are pretty strong, so all you need is a little bit to take your dish to the next level. For reference, if a recipe calls for 8 ounces of broth or stock, you only need 1 teaspoon of Better Than Bouillon base, mixed with 8 ounces of water, to get the same rich flavor you’d get from any kind of broth or stock.

Keto-Friendly Cauliflower Stuffing
Recipe Type: Side Dish
Keeping a low-carb, gluten-free diet this holiday season? No problem! This Keto-Friendly Cauliflower Stuffing gets its bold flavor from lots of fresh rosemary, parsley and sage, and Better Than Bouillon Roasted Garlic base, the perfect ingredient to elevate all your holiday recipes.
Ingredients
  • 4 tablespoon butter (any vegan butter will work if you are dairy-free)
  • 2 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 medium head of cauliflower, chopped
  • Salt
  • Black pepper
  • 1/4 cup freshly chopped parsley
  • 2 tablespoon freshly chopped rosemary
  • 1 tablespoon freshly chopped sage
  • 1 cup water
  • 1 teaspoon Better Than Bouillon Roasted Garlic Base
Instructions
  1. Melt butter in a large skillet over medium heat.
  2. Add carrot and celery and sauté until soft.
  3. Add cauliflower and season with salt and pepper.
  4. Cover and cook until tender.
  5. Stir in parsley, rosemary, and sage.
  6. Pour broth over the dish.
  7. Cover and cook until tender and all liquid is absorbed.
