So, I go into work one morning and there’s a box of Rice Krispies sitting on my desk. Uh…what? Breakfast? Nope, my manager Amy gifted me the box so that I could bake with it. It was a full box with a fast-approaching “sell by” date and there was no way she and her daughter would finish the box, so naturally it needed to be used in another form. There is only one answer to this dilemma. Rice crispy treats, duh!
I’ve been wanting to make them forever. Rice Krispies Treats are ALL over the blogosphere. Every blogger I follow has made them at least once. And these are not your average Rice Krispies Treats —they’re filled with peanut butter cups, Oreos, Snickers, M&M’s, cookie butter, etc. I went the chocolate route and used Nutella and chocolate chips in one batch and Hershey’s dark cocoa powder in another, and they were a hit. High fives all around!

Nutella Rice Krispies Treats
3 tbsp butter
8 oz. big marshmallows
4 -5 cups Rice Krispies
1/4 cup Nutella
1/4 cup chocolate chips
Chocolate Rice Krispies Treats
3 tbsp butter
8 oz. big marshmallows
4-5 cups Rice Krispies
2 tbsp Hershey’s unsweetened cocoa powder
optional: chocolate chips
Melt the butter on low heat. Pour in the marshmallows and stir until completely melted. Mix in the Nutella or cocoa powder. Fold in the Rice Krispies and chocolate chips. Transfer into a pan coated with non-stick cooking spray. Let cool completely before cutting in squares.
