Oreo Cheesecake Truffles – No Baking Required!

When the weather is dark and gloomy, as it was all weekend long, there is no better way to lift the mood than by making a little something sweet! Now you know how much I love using my stand mixer, but today I was not feeling up to taking it out and I was definitely not feeling the clean-up part that would come later. Be it a mix of the rain and just being extremely tired from staying out until almost 3 am the night before (oops…), I wanted something quick and easy without sacrificing taste. 
 
I remembered something I made with my friend Jess back home in Jersey last year. She showed me this super-simple recipe for Oreo cheesecake truffles — no baking required! We made these during one of our lazy Sunday afternoon hangouts, where a movie and snacks are always involved. This time, however, we wanted something sweet as well. These little truffles are so easy and only take a little more than 30 minutes to make (including freezing time). 
You can have a lot of fun with this simple dessert by using the different varieties of Oreos &mdash: Original, peanut butter, golden, mint, or the seasonal flavors — and melting whatever kind of chocolate you prefer. When Jess and I made them, we used mint Oreos and melted chocolate chips. This time around I used Original flavor Oreos and melted Andes Mint baking chips for the outside coating. 
 
No Bake Oreo Cheesecake Truffles

1 package Oreo cookies
1 8 oz. pack of reduced fat cream cheese
1 bag of chocolate chips of your choice
Grind up the Oreos in a food processor. Combine the Oreo cookie crumbles with the cream cheese. It’s much easier to do with your hands than with a spoon so wash up and get ready to be a little messy! Roll the mixture into small balls and line up on wax paper. Freeze for 15 minutes. During this time, melt your chocolate. If you aren’t savvy to tempering chocolate over the stove, it’s fine to use the microwave. Either way works! Dip each ball into the melted chocolate and coat completely. Place back onto the wax paper and freeze again for another 15 minutes.
