“Spaghetti and Meatballs” Turkey Meatballs with Spaghetti Squash

Can you believe we are already a day into 2014? Shouldn’t we be living like the Jetson’s by now? I mean, seriously, this is the time we dreamt of when we were little. We should be driving spaceships, teleporting and giving orders to our robot butlers and maids. There are definitely some futuristic things going on nowadays, but I want my own jet pack pleeeeease!

Anyway, even if the time is going way too fast and it’ll be the year 3000 before we know it, sometimes we need to go back to what we know and love. The food we loved as kids, that makes us feel like no matter what happens, we will always have the simple things in life that make us happy. Dishes like grilled cheese sandwiches, peanut butter and jelly, macaroni and cheese, spaghetti and meatballs. Ah, spaghetti and meatballs: the best of the best when it comes to simple deliciousness.

But simple is never simple, is it? Not now, anyway. This “Spaghetti and Meatballs” reminds us of that familiar, comfortable dish we had all the time as a kid, giving us the hit of nostalgia we long for as soon as the world goes a little crazy aroundus. BUT this version is good for those of us who don’t eat red meat or want to cut back on carbs (especially after the food-filled holiday season that just passed). It’s healthy and full of flavors you may not have gotten back when you were almost as picky about your food as you were about the color of your backpack and hair barrettes.

By the way, this is another fabulous recipe from my roommate Amy that she has taught me and we have made together for dinner. It’s a favorite in our house, and should be in yours too!

“Spaghetti and Meatballs”

Turkey Meatballs with Spaghetti Squash

For the “meatballs”
1½ pounds ground turkey
1 large egg
½ cup breadcrumbs
1 cup tomato sauce
For the “spaghetti”
1 large spaghetti squash, cooked
1½ cups tomato sauce
1 15 oz. bag fresh spinach, cooked
1 cup feta cheese

Preheat the oven to 350 degrees. In a large bowl, combine the ground turkey, egg, breadcrumbs and tomato sauce. Mix until everything is evenly distributed. Roll into medium sized balls and arrange on a baking sheet. Bake for 10 minutes. Remove the balls from the oven and turn them over. This is to ensure that the meat is evenly cooked. Bake for another 10 minutes.

While the meatballs are cooking, combine the cooked spaghetti squash, tomato sauce and cooked spinach in another bowl. Mix together and top with feta cheese.
