We may be a month away, but that doesn’t mean we can’t start our party planning! The best Halloween party I ever went to was a few years back before I moved to Florida. One of my co-workers put on quite the show — costumes only, no kids, and every single piece of food followed the Halloween theme. I had no idea what I was actually eating half of the time I picked something up from the table, but that was the fun part about it. It was super impressive and really creative.

When #SundaySupper offered the opportunity to work with Idaho® Potatoes to create a fun and scary Halloween recipe, I had to get on board. It seemed easy at first, but then I found myself struggling to figure out what to make. Finally it clicked —  Russet Potatoes can be cut in quarters to look like graves! I went with my no-fail basil pesto for the grassy ground beneath these potatoes, and even used a toothpick to write RIP on the “graves.” I was letting my creative juices flow when my roommate walked in the kitchen and looked at me like I was crazy. But then she totally got into it and brought me out her Halloween jewelry stash. Spiders galore! There is nothing spookier than a creepy crawly spider all up in your face.

My Roasted Potato Graveyard is made out of delicious Idaho® Potatoes (my favorite potatoes to cook with!) that have been tossed in olive oil, Italian seasoning, salt and pepper and roasted until nice and crispy. I’m not a fan of soft or mashed taters, nope, not me — I like ’em either sliced super thin and practically burnt, or if cut thicker like they are in my Roasted Potato Graveyard, then they need to have that perfectly crispy outside. I am particular about my potatoes, and Idaho® Potatoes always seem to do the trick.

A Roasted Potato Graveyard for #SundaySupper

Idaho® Potatoes are the star of the show this Halloween with lots of fun and spooky recipes to dress up your party spread. Creamy basil pesto grass and Italian spiced roasted potato graves make this Roasted Potato Graveyard a hit for Halloween.
Ingredients
  • 1 cup prepared basil pesto (recipe here: https://takeabiteoutofboca.com/2013/10/basil-pesto-sundaysupper.html)
  • 1 medium russet Idaho® Potato
  • 1-2 tsp olive oil
  • 1 tbsp Italian seasoning
  • salt and pepper
Instructions
  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  2. Cut the potato in four quarters and toss with olive oil, Italian seasoning, salt and pepper.
  3. Roast in the oven for 40 minutes, making sure to turn them at the halfway point.
  4. While the potatoes are cooking, make your pesto and use a silicone spatula to spread it over the surface of a plate.
  5. Once the potatoes have cooled, use a toothpick to carefully write the letters “RIP” on the flat surface.
  6. Place the potatoes on top of the pesto and garnish any creepy crawler critters for a spookier effect!
