There is something so tempting about mini food — things that are bite-sized and easy to pick up and shove in your pie-hole without thinking twice. When it comes to desserts, anything mini can be super dangerous because a) it’s way too cute to pass up, b) it’s way too little to only have one, and c) it’s way too easy to go back for more. 

#SundaySupper likes to party, and parties are usually where you find mini treats, along with trays and trays of finger-lickin’ good foods and other yummy things that are easy to display and pleasing to the eye — think things like obvious cheese and crackers or pretzels and chips with loads of different kinds of dips; soup shooters, sliders, skewers, things stuffed with other things… I could go on forever. My sweet tooth loves bite-size desserts like White Chocolate PB & Banana Bites because it’s just so freaking easy to eat one after the other after the other (until your tummy starts to hate your sweet tooth and it’s just not a fun battle.) I used Peanut Butter and Company’s White Chocolate Wonderful — yes, white chocolate-flavored peanut butter. Paired with bananas. I’m not kidding — these are some seriously good bites. The texture    is very much like banana bread and the flavor of white chocolate and peanut butter really shine through. In my humble opinion, this is banana bread at its finest!

So many I be exaggerating a liiiittle bit when I called these “bites.” Unless you have a really big mouth. They probably take two-bites, otherwise you’d be forcing these in your mouth and not really allowing yourself to enjoy the flavors of white chocolate peanut butter and banana. It’s actually a good thing that those White Chocolate PB & Banana Bites are more of a two-bite dessert, because after that first taste, you might not be able to stop. At least this is one more bite in the way before you reach for a second helping.

Oh, and what’s on top? Dark chocolate. Because everyone needs a little dark chocolate in their lives. Am I right?

White Chocolate PB & Banana Bites

White Chocolate PB & Banana Bites are a sweet mix of creamy white chocolate-flavored peanut butter and banana, designed to just the right size that will keep you coming back for more.
Ingredients
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup Peanut Butter and Company White Chocolate Wonderful
  • 3 very ripe bananas, mashed
  • 1 1/2 cups ap flour
  • 1 dark chocolate bar
Instructions
  1. Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  2. In the bowl of a stand mixer, beat sugar, egg, vanilla and peanut butter until light and fluffy.
  3. Add mashed bananas and mix on medium-speed for 1-2 minutes.
  4. Add flour and continue to mix until just combined.
  5. Pour batter into the prepared loaf pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Once the banana bread has completely cooled, melt dark chocolate in the microwave for 1-2 minutes, stirring every 30 seconds, until fully melted. Pour melted chocolate over the entire loaf and use a spatula spread evenly.
  7. Slice bread into two-bite size pieces. You should be able to get about 24 pieces.
